I love your content because of the details of building pepper lunch. I’m an immigrant trying to open my multi unit operation in the FC space sometime next year. I have experience owning 7 bakery concept locations in South America but the US is a whole different game. I’m listening all the podcasts, reading all the magazines and books, looking for the correct brand, looking who owns them, hearing what management is saying about the brand, what are they doing, AUV, locations opened/closed, signed but not opened, etc, etc
I’ve found hundreds of franchise experts that talk about this but they don’t go into details like you do, (maybe because you’re not trying to sell me a mentorship?)
I think you’re one of the few guys out there providing real tangible value:
- How you got your GC?
- What specific work your architects did? (What if I don’t have the time for full plans?!)
- What’s your rule of thumb for rent %?
- What specific company you hired for signs and how did the process looked?

Please continue to write in this way. Get into the nuts and bolts. Tell me the raw reality of what you’re doing and don’t sugarcoat it!
(Pepper lunch is on my potential brand list, brands I’ll contact to see if there’s any opportunity in my area. I have some doubts about the concept though)
